Though simplified models of Dark Matter have been of much utility in studies of indirect detection and collider searches for Dark matter production, the community has been aware of the limitations of these models. Particular sticking points are the lack of theoretical consistency of some of them and their restricted phenomenology. I discuss features of theoretically consistent and UV complete DM models known as Next Generation Models. I explore the interesting and intricate phenomenological consequences, including complex mediation sectors and DM couplings to multiple standard model particles . These features  lead to novel collider signatures and complex indirect detection spectra.
